Whether you are gearing up for the big game, or just craving a warm bowl of chili, this recipe is a winner. Lots of smoky flavors that just get better and better as it simmers in the slow cooker. Don’t be intimidated by the ingredient list, this a good way to use up the spices in the cabinet.

INGREDIENTS

  • 3 boneless skinless chicken breasts
  • 1 yellow pepper, diced
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 stalk celery, chopped
  • 1 serrano pepper, deveined, deseeded, and minced
  • 4 tablespoons tomato paste
  • 3 tablespoons chili powder
  • 1 tablespoon dried chipotle pepper powder
  • 1 tablespoon Imperial Sugar Dark Brown Sugar
  • 1 tablespoon smoked sweet paprika
  • 2 teaspoons dried oregano
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 can (15 ounces) cannellini beans, rinsed and drained
  • 1 can (15 ounces) red kidney beans, rinsed and drained
  • 1 can (28 ounces) fire roasted diced tomatoes

To serve

  • Shredded cheddar cheese
  • Sour cream
  • Tortilla chips

DIRECTIONS

  1. Add all ingredients to the insert of a slow cooker. Cook on high for 3.5 hours or on low for 7.
  2. Remove chicken breasts from slow cooker and shred with two forks. Add back to slow cooker.
  3. Serve with shredded cheese, sour cream and tortilla chips
