This fresh, simple and light dessert recipe takes juicy, ripe strawberries and tosses them with fresh mint and a dash of sugar. Then the strawberry mixture is spread atop toasted, buttered pound cake.

INGREDIENTS

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Place pound cake slices on a cookie sheet. Brush with butter and sprinkle with brown sugar. Bake for 8-10 minutes or until lightly toasted.
  3. Combine strawberries, sugar, lime juice and mint, if desired; mix lightly.
  4. Spoon strawberry mixture on toasted pound cake slices. Serve immediately.
