These Strawberry Shortcake Cookies are a breeze to throw together.  The tartness from the fresh berries takes the basic cookie over the top!  Need more goodness?  Try adding a few white chocolate chips to the mix before baking, or dip in whipped cream while serving.  Dig in!

INGREDIENTS

*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

DIRECTIONS

  1. Preheat oven to 325°F.  Spray two cupcake tins with cooking spray; set aside.
  2. Combine butter, cream cheese and sugars in large bowl and beat until smooth and creamy.  Add eggs and vanilla and beat until well combined.
  3. Stir in flour and baking soda on low speed until just combined.
  4. Stir in berries until just mixed.
  5. Spoon batter onto prepared cupcake tins filling half full.  Bake 13-15 minutes, or until edges are lightly browned.  Serve and enjoy!
