Giant sugar cookie topped with any and all kinds of fruit. Great recipe for little hands. Let’s your kids go wild decorating it with all kinds of fresh fruit. Icing is made with protein-rich Greek yogurt.

Sugar Cookie Fruit Topped Pizza

INGREDIENTS

  • 3/4 cup Imperial Sugar Extra Fine Granulated Sugar
  • 2/3 cup butter, softened
  • 1 teaspoon vanilla
  • 1 large egg
  • 1 1/2 cups all-purpose flour (spoon and sweep method*)
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup plain Greek Yogurt
  • 1/4 cup
  • 1 teaspoon vanilla
  • 4 cups assorted fruit (such as sliced kiwi, strawberries, peaches, blueberries and raspberries)

DIRECTIONS

  1. Preheat oven to 350ºF.
  2. Beat sugar and butter with an electric mixer until light and fluffy. Add vanilla and egg; mixing until well blended.
  3. Stir in flour, baking powder and salt; mixing until well blended.
  4. Using floured hands press dough into a greased 12-inch pizza pan.
  5. Bake for 15-18 minutes or until golden brown. Cool completely on wire rack.
  6. Fruit pizza: combine Greek yogurt, sugar and vanilla. Spread onto sugar cookie pizza crust. Arrange fruit on top of filling. Refrigerate until ready to serve.
  7. Frosted cookie pizza; spread cookie with prepared frosting. Decorate with sprinkles. Add an expression such as “Happy Birthday or Congratulations”.
  8. To prepare frosting: Combine 1/3 cup butter, softened, 3 cups Imperial Sugar Confectioners Powdered Sugar, 2-3 tablespoons milk, 1 teaspoon vanilla and food coloring, if desired.
