Sugar Cookie Fruit Topped Pizza

INGREDIENTS
- 3/4 cup Imperial Sugar Extra Fine Granulated Sugar
- 2/3 cup butter, softened
- 1 teaspoon vanilla
- 1 large egg
- 1 1/2 cups all-purpose flour (spoon and sweep method*)
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup plain Greek Yogurt
- 1/4 cup
- 1 teaspoon vanilla
- 4 cups assorted fruit (such as sliced kiwi, strawberries, peaches, blueberries and raspberries)
DIRECTIONS
- Preheat oven to 350ºF.
- Beat sugar and butter with an electric mixer until light and fluffy. Add vanilla and egg; mixing until well blended.
- Stir in flour, baking powder and salt; mixing until well blended.
- Using floured hands press dough into a greased 12-inch pizza pan.
- Bake for 15-18 minutes or until golden brown. Cool completely on wire rack.
- Fruit pizza: combine Greek yogurt, sugar and vanilla. Spread onto sugar cookie pizza crust. Arrange fruit on top of filling. Refrigerate until ready to serve.
- Frosted cookie pizza; spread cookie with prepared frosting. Decorate with sprinkles. Add an expression such as “Happy Birthday or Congratulations”.
- To prepare frosting: Combine 1/3 cup butter, softened, 3 cups Imperial Sugar Confectioners Powdered Sugar, 2-3 tablespoons milk, 1 teaspoon vanilla and food coloring, if desired.
