Lemon Drop Cookies

INGREDIENTS

  • 1 cup butter, softened
  • 2 cups Imperial Sugar Extra Fine Granulated Sugar
  • 2 large eggs
  • 1 1/2 cups sour milk (to make sour milk, add a little vinegar or lemon juice)
  • 1 teaspoon baking soda
  • 1 teaspoon lemon extract
  • 2 teaspoons baking powder
  • 4 1/2 cups all-purpose flour (spoon and sweep method*)
  • Yellow food coloring
  • Lemon Butter Frosting

*Using spoon fill measuring cup with flour until required amount is obtained. (Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.)

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Cream butter and sugar in a mixing bowl using an electric mixer. Then, add eggs and mix slightly. 
  3. Dissolve baking soda in milk and add to mixture. Add lemon extract, baking powder and flour. Mix well.
  4. Drop by teaspoonfuls onto an ungreased cookie sheet.  Bake for 15 minutes or until cookies are golden brown. 
  5. Optional: Prepare Lemon Butter Frosting and add yellow food coloring last blending well. Spread frosting as desired on cooled cookies.
