There are many types of baked goods that fall into the category of pastry. There is the shortcrust pastry, puff pastry, flakey pastry, choux pastry and the hot water crust pastry, the favorite for making savory pies.  A light and airy texture is necessary for a good pastry and the high fat content of pastry contributes to the flakey or crumbly texture. Be aware that overworking pastry dough creates long gluten strands and will result in a tough pastry; therefore care must be taken while combining ingredients.
