“The head of the year” is the literal translation of Rosh Hashanah and is the Jewish New Year. It is also believed to be the day Adam and Eve started out on earth. Part of the traditional customs include eating apples with honey which is supposed to  bring about a sweet new year and the sounding of a rams horn (called a shofar – sorry we do not have recipes or a craft project for hollowing out a rams horn).
