Butternut Squash with Caramelized Onions

Ingredients

  • 2 tablespoons butter
  • 2 large onions, thinly sliced
  • 1/4 cup packed Imperial Sugar Light Brown Sugar
  • 1/2 teaspoon ground cinnamon
  • 4 cups butternut fresh or frozen cubed butternut squash, cooked
  • 2 tablespoons chopped pecans

      Directions

      1. Melt butter in a large skillet over medium heat. Add sliced onion; cook and stir for 8-10 minutes or until onion is tender and starting to brown.
      2. Stir in brown sugar and cinnamon; cook and stir for 2-3 minutes or until onions are caramelized.
      3. Stir in cooked squash; heat through. Sprinkle with pecans just before serving.

      This is a delicious recipe.

      If you cook the squash, as opposed to buying it frozen, don't overcook it because it needs to be slightly firm in order to be cut into cubes.

      • 2 cucharadas mantequilla
      • 2 cebollas grandes, cortadas en rodajas finas
      • 1/4 taza compacta Imperial Sugar Azúcar Morena Clara
      • 1/2 cucharadita canela en polvo
      • 4 tazas calabaza de olor fresca o congelada en cubos, cocida
      • 2 cucharadas pecanas picadas

      Direcciones

      1. Derrita la mantequilla en una sartén grande a fuego medio. Agregue la cebolla en rodajas; cocine y revuelva durante 8-10 minutos o hasta que la cebolla esté tierna y empiece a dorarse.
      2. Incorpore el azúcar morena y la canela; cocine y revuelva durante 2-3 minutos o hasta que las cebollas estén caramelizadas
      3. Incorpore la calabaza cocida; caliente bien. Espolvoree con pacanas justo antes de servir.
