Crockpot Brown Sugar Bourbon Chicken Sliders with Sweet Bourbon Glaze

Ingredients

  • Slow Cooker Chicken
  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 can (15 ounces) low-sodium chicken stock
  • 1/2 cup packed Imperial Sugar Dark Brown Sugar
  • 1/4 cup Bourbon
  • 2 teaspoons liquid smoke
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • 1 bay leaf
  • 1/2 yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 teaspoons cornstarch
  • Sweet Bourbon Glaze
  • 1/4 cup packed Imperial Sugar Dark Brown Sugar
  • 1 tablespoon Bourbon
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder

      Directions

      1. Mix stock, brown sugar, bourbon, liquid smoke, Worcestershire sauce and garlic, salt and pepper in small bowl.
      2. Place chicken breasts in the of a large slow cooker. Spread onions on top of chicken and pour brown sugar mixture over the top of  chicken and onions and cover.
      3. Cook on low for 6 hours or high for 4 hours.
      4. Remove chicken and allow it to cool for about 10 minutes and then shred. Remove 1/4 cup of remaining liquid and mix with 2 teaspoons cornstarch until combined.
      5. Return chicken to slow cooker and stir in cornstarch mixture. Cook for several minutes, stirring constantly, until the liquid thickens. While mixture is thickening, make sweet bourbon glaze. Mix dark brown sugar, bourbon, cider vinegar, Worcestershire sauce, onion powder and garlic powder.
      6. Serve on slider buns with pickles and sweet bourbon glaze.
      Imperial Sugar Insight

      For a non-alcoholic version, substitute the bourbon in the mixture with 1/4 cup stock and 2 T brown sugar. In making the glaze, substitute bourbon with honey or maple syrup.
