Coconut Dream Bars

Coconut Dream Bars



  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup Imperial Sugar Light Brown Sugar
  • 1 cup all-purpose flour*

Coconut Dream Layer

  • 2 large eggs
  • 1/2 cup Imperial Sugar Light Brown Sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour*
  • 1/2 teaspoon baking powder
  • Pinch salt
  • 1 cup sweetened coconut flakes
  • 1 cup chopped pecans
  • 1/4 cup dark chocolate chips

*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.


  1. Preheat oven to 350°F. Line an 8x8 or 9x9-inch baking pan with parchment paper or spray with non-stick cooking spray. Set aside.
  2. In bowl of a mixer, beat butter, brown sugar, and flour together until completely combined and no longer crumbly. You may need to use your hands to help it along.
  3. Press into prepared baking pan and bake for 15 minutes.
  4. In same bowl just used, beat eggs for one minute, then add in brown sugar and vanilla, mixing until combined.
  5. Stir in flour, baking powder, and salt. Fold in coconut, pecans and chocolate chips by hand and give it a good stir. Spread coconut mixture on top of warm bottom layer.
  6. Place back into oven to bake for 25 more minutes or until top is lightly golden brown. Allow to set up and cool completely before cutting into bars.
