Apple Coffee Cake Imperial

Ingredients

Apple Coffee Cake

  • 1/2 cup unsalted butter, softened
  • 1 cup Imperial Sugar Light Brown Sugar
  • 2 whole large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour*
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 2 cups peeled and chopped apples

Streusel Topping

*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

Directions

  1. Preheat oven to 350° F. Prepare a 9-inch baking dish with grease and flour, or line with parchment paper. Set aside. 
  2. In an electric mixer start by creaming butter and brown sugar together until smooth.
  3. Add eggs and vanilla and beat until fully incorporated.
  4. In a separate bowl whisk together flour, cinnamon, baking powder, baking soda, and salt until blended.
  5. Slowly alternate adding flour mixture with sour cream until everything is just incorporated. Do not over mix or cake can get tough.
  6. Fold in chopped apples and spread into prepared baking pan.
  7. Next mix together crumb topping using your fingers or a fork to blend mixture to be consistency of sand.
  8. Spread evenly over cake and bake for about 45 minutes until a tester comes out clean.
  9. Remove from oven and let it cool for at least 10 minutes before slicing to serve.
