Brown Butter Bourbon Spice Cookies

Ingredients

    • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

    Directions

    1. Preheat oven to 325°F.
    2. Line two large baking sheets with a Silpat liner or parchment paper.
    3. In a medium bowl, mix flour, baking soda, salt, cinnamon, nutmeg and allspice together until blended. Set aside.
    4. In bowl of a stand mixer, add all of sugars, along with cooled brown butter and using a paddle attachment, mix until well-blended. It won’t be creamy like a normal cookie batter. Add egg, egg yolk and vanilla and mix until combined. With mixer on low sweet, add bourbon and mix until it is distributed.
    5. Slowly add dry ingredients and mix just until incorporated. Using a 2 3/4-ounce ice cream scoop, scoop dough onto prepared baking sheets. Bake in preheated oven for 10-12 minutes until the cookies are just done on edges.
    6. Cool for about 5 minutes on cookie sheet before transferring to a wire rack.

    To brown butter: place butter pieces in a small sauce pan over medium heat. When butter begins to foam, stir with a wire whisk and continue to whisk constantly. The color will begin to change and you’ll see some brown flakes on the bottom of the pan. Continue to stir until the butter has a nutty fragrance and is golden brown. Remove from heat and stir until the foam subsides. The whole process will take 8-10 minutes. Be patient!

    • *Método de cuchara y barrido: use una cuchara para llenar la taza de medir con harina hasta obtener la cantidad requerida. Si coloca la taza de medir directamente en la bolsa de harina, empacará la harina con firmeza y se necesitará demasiada harina para la receta.

    Direcciones

    1. Precaliente el horno a 325 F.
    2. Forre dos bandejas grandes de hornear con papel parafinado.
    3. En un envase mediano mezcle la harina, bicarbonato de sodio, sal, canela, nuez moscada y la pimienta de Jamaica hasta que todo esté bien mezclado. Ponga a un lado.
    4. En el envase de una batidora de pie, agregue todos los tipos de azúcar, así como también la mantequilla marrón ya fría y usando las paletas mezcle bien hasta que todo esté bien mezclado. No va a ser cremoso como cualquier otra masa de galleta. Agregue huevo, yema de huevo y vainilla y mezcle hasta que esté bien combinado. Con la batidora a velocidad baja, agregue el Borbón y mezcle hasta que esté bien distribuido.
    5. Lentamente agregue los ingredientes secos y mezcle hasta que todo este incorporado. Usando una cuchara de servir helado de 2 3/4 de onza, saque la masa y coloque en las bandejas de hornear antes preparadas. Hornee en el horno precalentado por 10 a 12 minutos hasta que las galletas estén listas en las orillas.
    6. Enfríe por alrededor de 5 minutos en una bandeja de galletas antes de transferir al estante de alambre.
