Ingredients
- 1/2 cup Imperial Sugar Extra Fine Granulated Sugar
- 2 1/2 cups boiling water
- 1 cup Imperial Sugar Extra Fine Granulated Sugar
- 2 tablespoons butter
- 1 teaspoon vanilla
- 1/8 teaspoon salt
- 1/2 cup Imperial Sugar Extra Fine Granulated Sugar
- 1 tablespoon soft butter
- 1/2 cup milk
- 1 1/2 teaspoons baking powder
- 1 1/4 cup sifted all-purpose flour*
- Chopped pecans
- Vanilla ice cream or whipped cream (optional)
- *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.
Directions
- Caramelize 1/2 cup sugar by melting slowly in heavy pan over low heat, stirring with a wooden spoon until it becomes brown in color.
- Add boiling water, 1 cup sugar and 2 tablespoons butter; boil 10 minutes, add vanilla and salt. Remove from heat.
- In a separate bowl, cream 1/2 cup sugar and 1 tablespoon soft butter. Add milk, baking powder, and flour, mixing into stiff batter.
- Coat an 8x8-inch baking pan with butter or non-stick cooking spray. Pour caramel into pan. Drop batter by large spoonfuls into caramel mixture.
- Bake at 400°F for 15 minutes. Serve warm, with ice cream or whipped cream if desired. Sprinkle with chopped pecans.
