Coconut Tart

Ingredients

  • Tart Crust
  • 2 cups graham cracker crumbs, about 16-18 graham crackers crushed
  • 1/2 cup Imperial Sugar Extra Fine Granulated Sugar
  • 6 tablespoons unsalted butter, melted
  • Filling
  • 1 cup coconut water
  • 2 teaspoons lime zest
  • 4 tablespoons fresh lime juice
  • 1 1/2 cups sweetened shredded coconut
  • 1/2 cup Imperial Sugar Extra Fine Granulated Sugar
  • 1 cup sweetened condensed milk
  • 3 large eggs, plus 1 egg yolk
  • 2 teaspoons vanilla extract
  • Garnish
  • 1/2 cup sweetened shredded coconut

      Directions

      1. Preheat oven to 350° F.
      2. In a mixing bowl combine graham cracker crumbs and sugar, mix well.
      3. Add melted butter and stir to coat graham cracker crumbs and begin to hold together.
      4. Press crumbs evenly with fingers or bottom of glass both on bottom and up the sides of an 11-inch tart pan with removable bottom.  Place tart pan on baking sheet and bake 10 minutes, or until crust is golden brown.
      5. In a saucepan add coconut water, lime zest, lime juice, shredded coconut and sugar.  Bring to a boil; stir to dissolve sugar.  Reduce heat and simmer for 10 minutes.  Remove from heat; cool completely.
      6. In a large bowl whisk together condensed milk, eggs, egg yolk and vanilla.  Incorporate cooled coconut mixtures; mix well.  Pour filling over tart crust on baking sheet and bake 30-35 minutes or until top is puffy and toothpick inserted comes out clean.  Remove from oven, transfer tart to wire rack to cool.  Add coconut to same baking sheet and return to oven.  Toast in oven for 10 minutes, until golden stirring occasionally. Remove tart from tart pan, scatter with toasted coconut and serve.

      Tarta de coco

      Relleno

      • 1 taza de agua de coco
      • 2 cucuharaditas de ralladura de limón
      • 4 cucharadas de jugo de limón fresco
      • 1 1/2 tazas de coco rallado, endulzado
      • 1/2 taza Imperial Sugar Azúcar Granulada Extra Fina
      • 1 taza de leche condensada
      • 3 huevos grandes, más 1 yema de huevo
      • 2 cucharaditas extracto de vainilla

      Decoración

      • 1/2 taza de coco rallado, endulzado

      Direcciones

      1. Precaliente el horno a 350° F.
      2. En un tazón combinar migas de galleta y el azúcar, mezclar bien.
      3. Añadir la mantequilla derretida y revuelva para cubrir migajas de galletas graham y comenzar a mantener unida.
      4. Presione las migas uniformemente con los dedos o la parte inferior del vidrio, tanto en la parte inferior y los lados de un molde de tarta de 11 pulgadas con fondo desmontable. Coloque molde de tarta en una bandeja para hornear y hornee 10 minutos, o hasta que la masa esté dorada.
      5. En una cacerola agregar el agua de coco, cáscara de limón, jugo de limón, coco rallado y azúcar. Llevar a ebullición, revolviendo para disolver el azúcar. Reduzca el fuego y cocine a fuego lento durante 10 minutos. Retire del fuego y deje enfriar completamente.
      6. En un tazón grande mezcle la leche condensada junto a los huevos, la yema de huevo y la vainilla. Incorporar la mezcla de coco enfriado, mezclar bien. Vierta el relleno sobre la corteza en una bandeja para hornear y hornee 30-35 minutos o hasta que la parte superior está hinchada y al insertar un palillo,  salga limpio. Retirar del horno, transferor la a una rejilla para enfriar. Añadir el coco a la misma bandeja para hornear y regresa al horno. Tueste en el horno durante 10 minutos, hasta que el coco se dorada en color, revolviendo ocasionalmente. Retire la tarta del molde de tarta, esparcir con coco tostado y servir.
