  1. In a microwave-safe bowl, large enough to hold all ingredients combine coconut oil or shortening and honey. Heat mixture just until coconut oil or shortening is melted.
  2. Place gelatin mixture in microwave for about 20-30 seconds until gelatin is melted. Add to oil/honey mixture and whisk smooth.
  3. Add orange extract, color and powdered sugar and knead to a smooth dough. If a stronger orange flavor is desired add more extract.
  4. Roll dough on sifted powdered sugar to approximately 1/8 inch or slightly thicker.
  5. Decorating surface can be done by rolling with a ribbed rolling pin or by dragging a fork.
  6. Cut using a round cutter of about 1 inch in diameter.
  7. Place on parchment-lined cookie sheets to dry for at least a day at room temperature in a dark place. A bright lit place will bleach out the color.
  8. Merrimints should have a slighty tender inside with a firmer exterior. It may take a few days of drying to obtain right texture.
