Cuban Coconut Flan

Ingredients

  • 1 cup Imperial Sugar Extra Fine Granulated Sugar
  • 1 can (12-14 ounces) coconut milk
  • 1 can (14 ounces) sweetened condensed milk
  • 6 large eggs
  • 1/2 cup fresh or frozen unsweetened coconut
  • 1 teaspoon vanilla extract
  • Pinch salt
  • Optional: 1/4 cup coconut liqueur (for extra coconut flavor)

      Directions

      1. Preheat oven to 325°F.
      2. Place 8 individual ramekins in a 9 x 13 inch deep baking pan and set aside.
      3. Be careful to perform following step of making caramel since it can severely burn skin. Ensure that you will have no distraction and that no children are around: Pour sugar in a saucepan and place over medium heat. Lightly shake pan until you notice that sugar is starting to caramelize on bottom of pan. Now stir sugar using a heat resistant or wooden spatula over medium heat. First sugar will make lumps but will eventually melt. Stir until sugar has turned into golden amber caramel. (Any small remaining lumps will dissolve in oven.)
      4. Remove from heat and carefully pour enough caramel into ramekins to fully coat bottoms. Set aside.
      5. Combine both milks, eggs, coconut, vanilla extract and salt in a blender and blend until very smooth and coconut is in small pieces. Add coconut liqueur if desired.
      6. Pour filling into ramekins covering caramel and constantly stir filling to prevent coconut from sinking to bottom.
      7. Pour hot water into baking dish reaching about one third of height of ramekins. Place in oven and bake until set and center of flan no longer trembles, about 60 to 75 minutes, depending on size of ramekins.
      8. Remove from oven and allow cooling until safe enough to handle. Place in refrigerator until completely cool or overnight.
      9. Run a sharp knife around edges and turn over onto a serving plate. If flan is stubborn and does not want to release, place ramekins briefly in hot water.

      Coconut flan is firmer in texture compared to standard flan but is delicious just the same. Even though this flan contains coconut milk and coconut, for some there is never enough coconut flavor. In such case add 1/4 cup coconut liqueur to the milk mixture. This flan can also be made into a nine inch round glass pie dish. The method remains the same.

      • 1 lata (12-14 onzas) leche coco
      • 1 lata (14 onzas) leche condensada
      • 6 huevos grandes
      • 1/2 taza de coco fresco o congelado sin azúcar
      • 1 cucharadita extracto de vainilla
      • Una pizca sal
      • 1/4 taza licor coco (opcional para sabor extra de coco)

      Direcciones

      1. Precaliente el horno a 325°F
      2. Coloque 8 potecitos individuales en un molde para hornear de 9 x 13 pulgadas de profundidad y póngalos a un lado.
      3. Tenga cuidado al realizar el paso siguiente de preparación del caramelo, ya que puede quemar gravemente la piel. Asegúrese de que usted no tendrá ninguna distracción y que no hay niños en su entorno: Vierta el azúcar en una cacerola y caliente a fuego medio. Agite ligeramente la cacerola hasta que se note que el azúcar está comenzando a caramelizarse en el fondo de la cacerola. Luego agite el azúcar a fuego medio, con una espátula resistente al calor o de madera. Al principio, el azúcar formará grumos pero se fundirá eventualmente. Revuelva hasta que el azúcar se convierta en caramelo de color ámbar dorado. (Los pequeños grumos restantes se disolverán en el horno.)
      4. Retire del fuego y vierta con cuidado suficiente caramelo en los potecitos para cubrir completamente los fondos. Ponga los potecitos a un lado.
      5. Combine las dos leches, los huevos, el coco, el extracto de vainilla y la sal en una licuadora y mezcle hasta que esté muy suave y que el coco esté en trozos pequeños. Agregue el licor de coco, si lo desea.
      6. Vierta el relleno en los potecitos, cubriendo el caramelo y agitando constantemente el relleno para evitar que el coco se hunda hasta el fondo.
      7. Vierta agua caliente en el molde para hornear, alcanzando aproximadamente un tercio de la altura de los potecitos. Coloque el molde en el horno y deje hornear hasta que cuaje y que el centro del flan deje de temblar, unos 60-75 minutos, según el tamaño de los potecitos.
      8. Retire el molde del horno y deje enfriar hasta que se pueda manejar sin peligro. Coloque los potecitos en el refrigerador hasta que estén completamente fríos o durante la noche.
      9. Haga pasar un cuchillo afilado alrededor de los bordes y voltee los potecitos encima de un plato para servir. Si el flan resiste y no se suelta, coloque los potecitos brevemente en agua caliente.
