Fresh Apple Cake

Ingredients

  • 1 cup (2 sticks) unsalted butter, soft
  • 1 1/3 cups Imperial Sugar Extra Fine Granulated Sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour*
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup cold coffee
  • 3 apples, Golden Delicious or Granny Smith
  • 1 cup raisins
  • 1 cup chopped pecans or walnuts
      • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

      Directions

      1. Preheat oven to 375°F.
      2. Line a 9 x 13 inch cookie sheet with parchment paper or butter and flour pan. Set aside.
      3. In a mixing bowl mix butter until light and fluffy. Add sugar and continue mixing until creamy. Add eggs one at a time and scraping bowl in between additions. Add vanilla.
      4. Sift together flour, baking soda, cinnamon, nutmeg and salt. Add a third of dry ingredients to butter mixture and combine. Add half of coffee and combine well. Repeat with flour then remaining coffee and remaining flour mixture.
      5. Grate apples and add with raisins and pecans into batter. Spread cake batter into prepared pan and place in oven.
      6. Bake for approximately 30 to 35 minutes or until center bounces back when lightly pressed.
      7. Sprinkle with confectioners sugar. Serve warm or cold.

      I first got the "Apple Cake" recipe off the Imperial Sugar bag many years ago as a young military spouse. Imperial was the affordable sugar and we love it! Anyway, this recipe is a little different but going to try it!

      Made this with 1 cup brown sugar, 1/3 cup white sugar and no raisins or nuts. It would be great with chopped pecans and a cream cheese frosting! I also finely chopped my apples, didn't grate them.

      I love this recipe, I have been making it since the late 90's when it was featured on the bag of sugar. I am now gluten free but I still make this cake using gluten free flour and some xanthan gum. It is wonderful. Sometime I make it with dates instead of raisins and sometimes just with pecans. Great recipe.

      I've been making this cake since high school (the recipe came from the sugar bag- I cut it out, saved it, and made it many times). It is wonderful! Not overly dense, just right. Good with cream cheese frosting or plain. I'm happy to find it again!

      • 2 barras o 1 taza de mantequilla sin sal, suave
      • 1 1/3 tazas de Imperial Sugar Azúcar Granulada Extra Fina
      • 2 huevos grandes
      • 2 cucharaditas de extracto de vainilla
      • 2 3/4 tazas de harina multiuso (Spoon and sweep method*)
      • 1 cucharadita de bicarbonato de soda
      • 2 cucharaditas de canela en polvo
      • 1/4 cucharadita de nuez moscada en polvo
      • 1/2 cucharadita de sal
      • 1/2 taza de café frío
      • 3 manzanas, Golden Delicious o Granny Smith
      • 1 taza de pasas
      • 1 taza de nueces pacanas o nueces, picadas
      • Imperial Sugar Azúcar en Polvo Confeccionar
      • *Método de cuchara y barrido: use una cuchara para llenar la taza de medir con harina hasta obtener la cantidad requerida. Si coloca la taza de medir directamente en la bolsa de harina, empacará la harina con firmeza y se necesitará demasiada harina para la receta.

      Direcciones

      1. Caliente el horno a 375° F.
      2. Engrase y espolvoree harina en un molde 9 x 13 o póngale papel de pergamino en el fondo. Póngalo a un lado.
      3. En un tazón de mezclar, bata la mantequilla hasta que este suave y espumosa. Añada la azúcar mezcle hasta que quede cremosa. Añada los huevos uno a la vez. Raspe las orillas de adentro e integre a la mezcla. Añada la vainilla.
      4. Cierna juntas la harina, el bicarbonato de soda, la canela, la nuez moscada y la sal. Añada ? a la mezcla de la mantequilla y mezcle, añada parte del café y mezcle bien. Repita con el resto de la harina y el café. Hasta
      5. Pele y ralle las manzanas, añada las pasas y las nueces a la mezcla. Vierta la mezcla en el molde.
      6. Hornee aproximadamente 30-35 minutos o hasta que el centro del pastel rebote cuando sea levemente apretado o cuando un palillo introducido en el centro salga limpio.
      7. Espolvoree con azúcar en polvo. Sirva caliente o frío.
      8. Para hacer el caramelo, combine todos los ingredientes en una cacerola y póngala a hervir. Hiérvalo por 3 a 4 minutos mientras revuelve constantemente. Quítelo del fuego y deje que se enfríe.
      9. Vierta el caramelo sobre un pastel tibio o frío.
