Pumpkin Whoopie Pies

  • 1 cup Imperial Sugar Extra Fine Granulated Sugar
  • 2 large eggs
  • 1/2 cup canola oil
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour*
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg

Maple Buttercream Filling

  • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

Directions

  1. Preheat oven to 350°F. Line a baking sheet with a Silpat or parchment paper.
  2. Beat sugar and eggs 2-3 minutes or until pale in color. Add oil, pumpkin, and extract. Beat again.
  3. Add flour, baking powder, baking soda, salt, and spices. Mix until combined.
  4. Use 1 1/2 tablespoons cookie scoop to drop batter onto prepared baking sheet. Bake 12-13 minutes. Remove and cool completely on a wire rack.
  5. Beat butter, salt, and maple extract until creamy. Add powdered sugar and heavy cream. Mix until combined. Increase speed and beat until light and fluffy.
  6. Use a piping bag and icing tip 12 to pipe frosting on 14 cookies. Top with remaining cookies. Store in a loosely sealed container at room temperature.
Imperial Sugar Insight

For a smooth and creamy buttercream frosting, all ingredients should be at the same temperature. If your liquid was not at room temperature, the mixture cannot homogenize and will take on a curdled appearance (become soupy looking). This is a sign that the mixture is still too cold. Rapidly stirring and gentle warming will emulsify the buttercream to a smooth and creamy consistency. Continue to mix while using a hair dryer on the outside of the mixing bowl until the perfect consistency is reached.
