No-Bake Pumpkin Cookies
- Line a large baking sheet with parchment paper. Set aside.
- In a medium-sized pot set to medium-low heat, stir melted butter, pumpkin, both sugars and spices together until smooth. Bring to a gentle boil for two minutes, stirring constantly.
- Remove from heat and fold in oats and vanilla. Allow to cool.
- Scoop mixture with a small scoop or a spoon and place on prepared pan to set up.
