Paletas are a Mexican frozen treat sold in mercados or by street vendors and are a sweet remedy for fighting off the summer heat. This Paletas de Melon recipe is easy to make for chefs of all ages.

    Directions

    1. In a small saucepan over medium heat combine water and sugar; stirring until sugar dissolves.  Let to cool to room temperature.
    2. To a blender add diced melon, sugar syrup and salt. Blend until smooth.
    3. Pour into a paleta mold, insert wooden sticks and freeze until solid, about 4 hours.
