Peach Chutney

Peach Chutney Imperial

Ingredients

  • 4 peaches, peeled and diced
  • 1 tablespoon vegetable oil
  • 1/2 cup onion, diced
  • 1 garlic clove, minced
  • 1 tablespoon fresh ginger, peeled and diced
  • 1/2 cup Imperial Sugar Light Brown Sugar
  • 1/4 cup apple cider vinegar
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • 1 teaspoon lemon juice
  • 1/3 cup golden raisins

Directions

  1. Warm oil in a saucepan over medium heat. Add in onion, garlic, and ginger. Stir 2-3 minutes until softened. 
  2. Stir in light brown sugar and apple cider vinegar. Keep stirring until the mixture comes to a boil and sugar dissolves.
  3. Reduce heat to medium low and stir in crushed red pepper flakes, salt, lemon juice, raisins, and peaches.
  4. Let simmer for 10 minutes, stirring occasionally.
  5. Remove from heat and let sit 10-15 minutes before serving.
