Salted Caramel Apple Pie Bars

Crust

  • 1/2 cup unsalted butter, softened
  • 1/2 cup Imperial Sugar Light Brown Sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour*
  • 1 cup rolled oats
  • 2 teaspoons apple pie spice

Apple Pie Filling

  • 4 tablespoons unsalted butter
  • 1/2 cup Imperial Sugar Light Brown Sugar
  • 1 1/2 tablespoons apple pie spice
  • 1/2 teaspoon coarse sea salt
  • 4 1/2 cups diced Honeycrisp apples (18 oz)
  • 1 1/2 tablespoons cornstarch
  • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

Directions

  1. Preheat oven to 350°F. Line an 8 X 8-inch pan with parchment paper.
  2. Beat butter and brown sugar until creamy. Add egg yolk and vanilla. Beat again.
  3. Mix in flour, oats, and apple pie spice until a soft dough forms.
  4. Press 2/3 of mixture evenly in bottom of prepared pan. Set 1/3 mixture aside. Bake 15 minutes. Remove and cool 10 minutes.
  5. Place butter, brown sugar, apple pie spice, salt, and apples in a large skillet. Cook over medium high heat for 3-4 minutes until apples soften slightly and release liquid.
  6. Pull apples aside and stir cornstarch into liquid. Stir everything until thickened. Remove from heat and let cool until crust is ready.
  7. Spread apple filling on top of crust. Crumble remaining oat mixture over top of apples.
  8. Bake 30 minutes. Remove and let cool.
