Spicy Orzo Carrot Salad


  • 3 cups water
  • 1/2 teaspoon salt
  • 1 cup Orzo
  • 1/3 cup olive oil
  • 1 teaspoon Imperial Sugar Extra Fine Granulated Sugar
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 3 tablespoons chopped fresh basil
  • 1 teaspoon chopped fresh oregano
  • 3 tablespoons fresh chopped flat parsley
  • 4 medium-sized carrots
  • 3 green onions
  • 1 red bell pepper
  • Optional: 3 ounce goat cheese or parmesan cheese


      1. In a saucepan, salt the water and bring to a boil. Add orzo and cook until tender, about 7 minutes. Drain.
      2. Meanwhile, prepare dressing by whisking together oil, sugar, 1/2 teaspoon salt, lemon juice, garlic powder, red pepper flakes, cayenne pepper, black pepper, basil, oregano and parsley.
      3. Pour dressing onto drained orzo and toss to combine.
      4. Shred carrots on coarse eye of grater, slice green onions and bell pepper in thin slices. Toss into orzo. Finish with a pinch of salt.
      5. If desired, serve with goat cheese or shredded parmesan.
