Spicy Orzo Carrot Salad

Ingredients
- 3 cups water
- 1/2 teaspoon salt
- 1 cup Orzo
- 1/3 cup olive oil
- 1 teaspoon Imperial Sugar Extra Fine Granulated Sugar
- 1/2 teaspoon salt
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1 teaspoon red pepper flakes
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 3 tablespoons chopped fresh basil
- 1 teaspoon chopped fresh oregano
- 3 tablespoons fresh chopped flat parsley
- 4 medium-sized carrots
- 3 green onions
- 1 red bell pepper
- Optional: 3 ounce goat cheese or parmesan cheese
Directions
- In a saucepan, salt the water and bring to a boil. Add orzo and cook until tender, about 7 minutes. Drain.
- Meanwhile, prepare dressing by whisking together oil, sugar, 1/2 teaspoon salt, lemon juice, garlic powder, red pepper flakes, cayenne pepper, black pepper, basil, oregano and parsley.
- Pour dressing onto drained orzo and toss to combine.
- Shred carrots on coarse eye of grater, slice green onions and bell pepper in thin slices. Toss into orzo. Finish with a pinch of salt.
- If desired, serve with goat cheese or shredded parmesan.
