Sweet Potato Cinnamon Toast

Sweet Potato Cinnamon Toast Imperial

Ingredients

  • 2 large, sweet potatoes
  • 2 tablespoons unsalted butter, melted
  • 1/4 teaspoon salt, divided
  • 2 tablespoons Imperial Sugar Dark Brown Sugar, divided
  • 1 teaspoon ground cinnamon, divided
  • Topping ideas: 1 cup cream cheese, softened and divided, cherry preserves, apricot preserves, assorted fruit, chopped

Directions

  1. Preheat oven to 400° F.
  2. Slice sweet potatoes lengthwise into 1/4-inch slices.
  3. Spray a large baking tray with nonstick cooking spray. Arrange slices on baking sheet and brush tops with butter. Roast for 10 minutes.
  4. Remove from oven and sprinkle each slice with salt, sugar, and cinnamon. Return to oven and roast for 10 more minutes. Cool on baking sheet for 5 minutes.
  5. Spread 2 tablespoons cream cheese on each slice, top with 1/2 tablespoon preserves and pieces of fruit. Serve immediately.
