Sweet Potato Fritters

  • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.


  1. Place sweet potato in a pot filled with water and bring to a boil. Turn to simmer and cook until center feels soft when poked with a fork or paring knife, about 25 minutes.
  2. Meanwhile slowly heat frying oil to 365°F.
  3. Remove potato from pot and when cool enough to handle remove peel. Scoop into a measuring cup to obtain 1 cup. (250g). Place in a bowl large enough to hold all ingredients.
  4. Add brown sugar, all spices, and salt. Whisk smooth. Before adding egg, mixture can no longer be hot, lukewarm is okay.
  5. Whisk in egg and vanilla. Sift together flour and baking powder and mix into the batter.
  6. Carefully drop about 1 tablespoon-sized pieces of dough into oil. Allow space for expanding and turn over after about 30-40 seconds or lightly browned. After 30-40 seconds turn again and then once more.
  7. Remove from oil using a slotted spoon and place on paper towels. Sprinkle generously with powdered sugar. Serve warm.
