Tepache Pineapple Drink
- Thoroughly wash pineapple with water, removing any dirt. Slice off top and bottom on pineapple, discard. Place pineapple on cutting board and carefully with a sharp knife slice off pineapple skin in strips. You will only need pineapple skin.
- Place water in a pot over medium high heat. Add brown sugar and cinnamon sticks. Bring to a boil, reduce heat, and stir until all sugar dissolves. Remove pot from heat, allow to cool completely.
- Once cool, place pineapple skins into pot and stir. Loosely cover pot with dish towel and place in cool dark place. Allow to steep for 24 hours. After 24 hours remove towel. The liquid will be dark, and you may see a bit of white froth. This is due to fermentation. Strain, taste for sweetness, adding more brown sugar if needed and serve over ice.
