Toasted Almond Cake

    • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.


    1. Preheat oven to 350°F.  Coat a 9-inch pan with cooking spray or butter. Set aside.
    2. Beat butter, sugar and eggs until smooth.  Sift baking powder and flour, then add to creamed mixture along with heavy whipping cream. Mix well.
    3. Pour into cake pan and bake for 30 minutes.
    4. Prepare almond glaze: In a small saucepan, melt butter, then add almonds, oats, sugar, cream and flour. Bring entire mixture to a bowl. As it boils, mixture will start to change consistency and become "tacky."
    5. Remove cake from oven after 30 minutes and top with almond glaze. Return cake to oven for 15 minutes more until almond glaze is browned.
    6. Cool cake on wire rack and serve warm.
