Erika is the creator behind The Pancake Princess, a bake off blog devoted to testing and curating some of the internet's most popular recipes. By crowd-sourcing the ratings for each recipe, Erika strives to take a data-driven approach to finding some of the most crowd-pleasing recipes. Originally from California, Erika has now called Houston, Texas home base for more than 10 years. The Pancake Princess has been recognized by Saveur for their 2019 Reader's Choice award for Best Baking & Sweets Blog.
